Dinner Tonight – Pioneer Woman’s Enchiladas

Confession time – I’ve never made enchiladas before…in my life.  In truth – I’ve nevercooked with corn tortillas before.  Considering where I live and the fact that TexMex ingredients are a dime a dozen makes that kind of amazing to me….guess you haveta be here….

So tonight I tried a new recipe.  I picked up The Pioneer Woman Cooks cookbook this weekend and the ingredients and instructions seemed to be the easiest to follow, with photos to make sure I don’t muck things up too badly.  She also has step by step photos and directions on her website – check out the recipe for Simple. Perfect. Enchiladas

It was a pretty good recipe – but i did NOT like the sauce very much.  It called for doctoring up a can of red enchilada sauce.  the sauce available in the stores here is Las Palmas and it had a weird mouth feel – like powder that didn’t dissolve in liquid.  I think there is one more brand i can try – Old ElPaso – then I’ll have to try to make my own or mail order something else.

I’m not saying they weren’t edible, or good….just that the sauce could be improved.

Quick Lunch – Lean Cuisine Market Creations

So sometimes I run out of the house without thinking about grabbing lunch, or like this morning, i want to save leftovers for dinner tonight.  I’ve been going through the options on these Lean Cuisine market Creations steam bags – and they’re pretty good.  I actually like them better than the frozen dinners in the boxes.

Here’s the lineup

I’ve tried the Asiago Cheese Tortellini and it was great – the zucchini was even a little crispy – and the Sweet & Spicy Ginger Chicken was good – the noodles weren’t mushy and the flavor was good – not to sweet and not too spicy.  Very “gingery” so if you don’t like ginger, steer clear.

What do you do with leftover Pie Crust?

Jam Tarts!l

We usually make Jam Tarts, or cinnamon crisps.  Either are easy – just roll out your dough cut rounds for tarts, put a tablespoon of jam in the middle, fold over and seal w/a fork.

Cinnamon crisps are even easier – roll out all of your dough – cut into manageable chunks if its really big – spread w/ melted butter and sprinkle with cinnamon sugar

bake 10-12 minutes in a 375degree oven – or until they’re GBD (golden brown & delicious)!

Sunday Dinner

Sunday Dinner – for a midwestern transplant like myself, the thought of sunday dinner brings to mind potatoes, gravy, meat of some sort (roast or porkchops usually) roasted carrots, and something tasty for dessert – preferably pie.

This picture has probably been placed in my brain by my daddy – who’s love for a roast dinner w/ potatoes, carrots, gravy and fresh bread is renowned in the Hartman-Hill families.  Dad is a full-time RV’er now – so when we see him I try to feed him up good.  I am constantly nagging him about less bologna and more veggies.  But his birthday is coming up…and he’s here this weekend…so we’re celebrating early and I’m making his favorite dinner for the family and the neighbors.

Roast is one of those things you can really screw up.  Trust me, I’ve done it.  The trick with MOST roasts is low low low, slow…and SEALED.  I use my dutch oven, put the lid on it – and i dont peek after it goes in the oven for the hours required to cook it through – plus one or two more.  The only time I peek is when I’m SURE its falling apart – and that’s just to be sure its not drying out.  I’m not afraid to add liquid to my roasting pan if i feel the meat is fairly lean and wont make a lot of its own.

So today is daddy’s day – and isntead of cake we’re making apple pies….who doesnt love apple pie?

Here’s the menu:

  • English Cut Roast with herbs and seasonings (no recipe- its basically what i put my hands on in the pantry)
  • Roasted fingerling and mini Youkon Gold Potatoes (cooked with the roast)
  • Roasted carrots (also cooked with the roast)
  • Gravy – no lumps allowed
  • Fresh homemade bread with butter, jam or honey
  • Asparagus salad
  • Homemade Apple Pie with fresh whipped cream and homestyle vanilla icecream

I’ll try to get some photos as I go – I’m not much of a photographer although I do try to be fancy – mostly its just food on a plate :)  If you’re coming to dinner, we’re eating at 7-sharp – dont be late!

More Fun from Hillville

Hello again my faithful and neglected blog readers……..

Life in Hillville is getting crazy as school starts again.  Aerik started last Monday the 16th (his 9th birthday too – not so much fun) and Maddie starts this Monday, the 23rd…not her birthday :)

After homeschooling for 7th grade, Janet our neighbor and Homeschool teacher extraordinaire procured herself a full time job with me at Blizzard, and so the girls are on their way back to public school.  We’ll see how that goes – altho I suspect it will be rocky to begin with.  She’s used to getting all of her work done in a few hours a day – school is going to hurt for a bit.  Also she’s shown she can get straight A’s – so this year I’m expecting the same – or dang close to it.

Toodles is getting ready for hunting season – Next weekend is the drop dead date – well for the elk anyway.  We’re gearing up for an 8 day pack trip he’s headed on somewhere around the 9th of September.  I think he’s crazy – its been 20 years since the man has been on a horse…but we’ll see how my urban cowboy does.  Hopefully someone takes pictures because this will be something I have to see!

No post would be complete without my promise to write more…altho it could very well be another six months before I even log in again….here’s hoping :)
